A love for chocolate cakes

Most of the time I bake cakes just for birthdays, but sometimes I make one just for the sake of it. When it is a family member’s birthday, they almost always order a chocolate cake. Here are my favorite chocolate cake recipes. I hope you enjoy it.

Chocolate chip pudding cake
Serving size: 12

This has to be my favorite chocolate cake of all time. My husband’s grandmother was in the hospital once and one of the nurses let her taste this cake which she loved
so he got the recipe. We’ve been making it for birthdays ever since. It’s a bit rich, but if you like chocolate, it’s for you.

Preparation method
1 box of chocolate cake mix – any brand
3 ounces chocolate pudding mix – instant
12 ounces chocolate chips
1 3/4 cups milk
2 eggs

Mix ingredients well and pour into prepared pan.
Bake for 1 hour at 325 *. Sprinkle with powdered sugar.

Blush cake

I like this cake because it is unusual and it is an additional way to use our garden beets!

Preparation method
1 1/4 cup all-purpose flour
1 cup granulated sugar
1/4 cup cocoa powder
1 teaspoon baking powder
2 Lg. Eggs
1/2 cup red beets – cooked and grated
1 1/2 tablespoon honey
1 teaspoon vanilla extract
1/4 C + 2 tablespoons butter or margarine – melted
1/4 cup milk

Glazed cream cheese:
1-3 oz. Pack Cream cheese
1 tablespoon of milk
1 teaspoon vanilla extract
2 1/2 cups caster sugar

Combine flour, sugar, cocoa, and baking powder in a large bowl. Set aside. With an electric mixer, beat the eggs, beets, honey, vanilla, butter and milk in another bowl. Add dry ingredients to egg mixture and beat on medium speed for 2 minutes. Pour into a greased 8 “square cake pan. Bake at 350 degrees for about 40 minutes. To make the frosting: Mix cream cheese with milk and vanilla. Gradually add sugar. Beat until smooth. If done too thick, add more milk, 1 teaspoon at a time. When cake has cooled completely, roll out
Cream.

The ultimate chocolate cake
A very moist and delicious cake.

Preparation method
2 cups of flour without sifting
2/3 cup cocoa
1 1/4 teaspoons baking soda
1/4 teaspoon baking powder
1 2/3 cups sugar
4 eggs
1 teaspoon vanilla
1 cup of mayonnaise
1 1/3 cups of water

Grease and flour bottoms of 2-ply (9 “) cake pans. Mix first 4 ingredients, set aside. In large bowl with high speed mixer, beat next 3 ingredients for 3 minutes or until smooth and fluffy. On low speed, whisk in mayonnaise. Add flour mixture in 4 alternate additions with water, beginning and ending with flour. Pour into molds. Bake in a 350 degree oven for 30-35 minutes or until the tester of Cakes inserted in center come out clean Cool in pans 10 minutes Remove and cool on wire racks.

Hot chocolate cake

This cake is low in fat, 14% according to my recipe program. However, you would never know by trying it.

Preparation method
1 cup all-purpose flour
3/4 cup sugar
6 tablespoons cocoa – divided
2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 cup of milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup packed brown sugar
1 3/4 C hot water
Whipped cream or ice cream-Opt.

In a medium bowl, combine the flour, sugar, 2 tablespoons cocoa, baking powder, and salt. Add milk, oil, and vanilla until smooth. Spread in ungreased 9 “square baking pan. Combine brown sugar and remaining cocoa; sprinkle over batter. Pour hot water on top; do not stir. Bake at 350 degrees for 35-40 minutes. Serve hot. Cover with whipped cream or ice cream if desired Yield: 9 servings.
